What Is Fleur de Sel?

Fleur de sel (pronounced "FLURE-de-sell") is a rare and expensive form of Sea salt that is harvested in parts of Europe and Americas .In French, the name translates as "flower of salt." It's delicate, flaky, and perfect for adding to dishes just before serving them.

A better explanation for how it is produced, is that Salt is a common mineral on our planet, and most of the salt used in cooking is either dug out of the ground, similar to the way coal or other minerals are mined, or extracted through a technique similar to fracking, where fresh water is pumped into the ground above a salt deposit. The salt dissolves in the water, and the salt-saturated water is then pumped out of another well and evaporated to produce salt.

Both of these methods are comparatively simple, though done on a large scale.

Fleur de Sel, however, is produced by a much more complicated process. It involves collecting the thin layer of salt that rises to the surface of shallow pools of seawater along the coast of the sea.

 

The product is usually obtained by solar evaporation of seawater, harvested by hand and in natura, preserving the more than 80 minerals and trace elements in seawater, as well as having lower sodium and higher potassium contents compared to common table salt.

A thin layer deposited on the top of the salt pans is removed with a squeegee, collecting what is called fleur de sel. This unique process results in a fragile, pyramidal crystal-shaped structure that is said to have an incomparably milder flavor than ordinary table salt.

 

 

How to Use Fleur de Sel

Sea salt flakes should be reserved for special occasions rather than everyday seasoning. Think of it as a gourmet finishing touch. Sprinkling just a few crystals over a dish can enhance its flavor, visual appeal, and texture. A small amount truly makes a big impact.

When using, handle it with care. It is very delicate and dissolves quickly, so it's best added to dishes right before serving. While its unique flavor remains after dissolving, the distinctive texture and appearance will be lost.

An interesting and delicious way to use Fleur de Sel is to sprinkle it on sweets like candies, caramels, or other desserts. This adds an unexpected burst of flavor and a touch of sophistication to your treats.

Other uses include as a topping for eggs, oatmeal, vegetables, cooked meats, poultry, and fish, as well as baked goods from pretzels to cupcakes.

 

What Does Fleur de Sel Taste Like?

Fleur de Sel is naturally salty, but its high moisture content gives it a distinctive briny flavor reminiscent of the sea. This salt is delicate and almost flaky, and the moisture helps the crystals stick together on your tongue, intensifying the flavor. This is why just a small amount can have a significant impact. However, it isn't inherently saltier than other sea salts.

 

Storing Fleur de Sel or Sea Salt Flakes

To maintain its unique qualities should be stored properly:

  • Airtight Container: Store Fleur de Sel in an airtight container to prevent it from absorbing moisture from the air, which can affect its texture and flavor.
  • Cool, Dry Place: Keep the container in a cool, dry place, away from direct sunlight and humidity.
  • Avoid Contamination: Ensure that the storage area is free from strong odors, as salt can absorb them, which might alter its taste.
  • Original Packaging: If possible, keep the Fleur de Sel in its original packaging within the airtight container for an extra layer of protection.
